Foiled Garlic Burgers


Here's another foil-covered recipe that's not only easy to make, but also easy to clean up. The burgers have a wonderful moist and garlicky taste to them.

Spread a large piece of aluminum foil over a baking pan, shiny side up. Form the ground beef into as many patties as needed and place on top of the foil. Generously spread with minced garlic, then oregano and chives, and sprinkle some sea salt and pepper on, to taste.

Cover with another piece of foil, shiny side goes toward the burgers, and seal the edges. Bake at 350 degrees for 45 minutes to one hour, until done.


I apologize that I couldn't get a better photo of the finished product. It was either keep trying for a better photo, or eat while it was hot and I chose to please my tummy. Mmmm ... glad I did.

Sweet and Sour Baked Meatballs



Here's a homemade meatball recipe. Great thing is you can prep them ahead of time, freezing them for later use in just about any recipe calling for meatballs.


For these I used barbecue sauce, grape jelly and ketchup for a sweet and sour flavor.


Landi Raemi's Sweet and Sour Baked Meatballs

2 lbs. ground beef
2 eggs
2 small onions, chopped in food processor
2 T. minced garlic
2-1/2 t. Italian seasoning
1 t. black pepper
1 t. sea salt

Bake at 350 degrees for 30-35 minutes.

When done, enjoy eating right away or place in ziploc freezer bag and store in freezer to use later.


Sweet and Sour Sauce:

When ready to use, place the meatballs in a crockpot on low and cover with a sauce made from the following ingredients:
Sweet Baby Ray's barbecue sauce, 1/3 to 1/2 bottle
Grape Jelly, 1/3 jar
Heinz Tomato Ketchup, about 1 cup

Mix all together and pour the sauce over the meatballs. If not enough to cover the meatballs, add more of any of the above sauce ingredients.

Honestly, the amount of sauce was way too much as there was a lot of leftover sauce. You could really cut the recipe in half or use twice the amount of meatballs.

Landi Raemi's Gluten Free Protein Powder Balls


Dang these things are addicting! I can't stop eating them! Since there's no baking involved, they're easy enough to make, too.

First measure the peanut butter, coconut oil and honey into a bowl and mix thoroughly.


Next measure out the oatmeal and grind it up in a food processor. Add the oatmeal, protein powder and chocolate chips to the liquid mixture, and mix thoroughly.


You can add more coconut oil if the mixture seems too dry.


When the dry ingredients are thoroughly mixed in with the liquid ingredients, roll the dough into balls.


Mmmmm ... can't wait to eat them!


Crisscross with a fork and you're done!

To be perfectly honest, mine don't usually make it to this point. I usually scoop out what I need into a cup and eat it from there! Yum!

1 c. gluten free old fashioned rolled oats
1/2 c. Jif natural peanut butter
1/4 c. honey (I buy mine from a local supplier)
2 T. coconut oil
2 scoops chocolate peanut butter protein powder
1/2 c. miniature chocolate chips

Measure and mix all liquid ingredients in a bowl and set aside. Measure the oats and grind into a flour in a food processor. Add the oats and protein powder to the liquid mixture. Mix thoroughly. Add the chocolate chips and mix. Roll into balls and place on wax paper. Flatten with fork by criss-crossing.
