Landi Raemi's Pizza Dough


My daughter, Keisha, and I decided to make a homemade pizza and decided to use the recipe I previously blogged on called Healthier Pizza Crust. But when I brought up the webpage, there was no recipe found since my intent was to just use any pizza crust recipe you had on hand. Needless to say, Keisha wasn't too happy with me. She said I needed to re-do the blog to include the recipe for the crust.


That being said, this time I will include the recipe for the crust. Once again, you can add any of your favorite toppings. For this particular pizza, we used canned chicken, green onions, spinach, yellow and red peppers. Pizza crust recipe below. Enjoy!

Landi Raemi's Pizza Dough:

1 c. water, divided
1 T. Stevia (or sugar)
1 T. dry yeast
1/2 t. salt
3-1/2 c. to 4 c. flour (+ more for kneading)
1/4 t. garlic powder
1/4 t. oregano
1-1/2 T. coconut oil (or butter)
Olive oil to grease stone
Corn meal for dusting stone

Dissolve yeast and Stevia in 1/4 cup of warm water. Let stand five to six minutes, until mixture is foamy. In a small bowl, mix together half the flour, remaining water, garlic powder, salt, oregano and coconut oil. Add yeast mixture, and stir to combine. Work in remaining flour until a soft dough forms. Transfer dough to a lightly floured surface and knead for ten minutes. Prepare pizza stone with olive oil and lightly dust with corn meal. Roll out dough to fit pizza stone and place onto stone. Prick crust with fork. Prebake at 400 degrees for 20 minutes. Add desired toppings and bake another 10 minutes.

Easier method: Measure water and coconut oil and place in microwaveable bowl. Microwave on high for one and a half minutes or until coconut oil is melted. Pour into bottom of breadmaker pan. Add the flour, making sure to cover all liquid. Add all remaining ingredients on top of flour. Set breadmaker to dough cycle and start. When cycle is finished, spread on greased pizza stone. Prick dough with fork and bake at 400 degrees for 20 minutes. Add desired toppings and bake another 10 minutes.
