We have been so busy this past year that I have not had time to do much blogging, which I truly miss. A good portion of the winter was spent remodeling our kitchen, which I had hoped to share but haven't found the time yet. Maybe soon.
I have to say it is absolutely wonderful to have my kitchen back! My daughter and I really missed cooking and baking together. For awhile now I have been wanting to try a few more soup recipes because they are perfect for taking leftovers to work. I usually end up changing recipes to suit my tastes or what I have on hand. And this recipe is no exception. Here is my first attempt at one of the soup recipes, and it is truly easy to make and so delicious!
Landi Raemi's Italian Tortellini Soup
1 lb. Italian sausage, casings removed
1 onion
2 t. minced garlic
1 c. chopped carrots
9 to 10 c. water
1 t. beef soup base
2 T. Italian seasoning
1 jar or can of tomatoes (I used a pint jar of my home canned tomatoes)
1 t. black pepper (I used 3 t. of my dried and chopped peppers)
1 pkg. tortellini
Shredded Parmesan cheese, optional
In a large pot, over medium heat, start browning the Italian sausage, breaking it up as you go. As it's browning, add the garlic. Chop the onion in a food processor, until small pieces, and add to the meat, stirring frequently. Chop the carrots in the food processor, until they are small chunks, and add to the meat mixture. Next, add the water and tomatoes and turn the heat up to high, stirring occasionally. Add the soup base, Italian seasoning and pepper. Cook for 10 minutes. Finally, add the tortellini, reduce the heat to low and simmer for 10 more minutes before serving. Sprinkle with Parmesan and enjoy!
