Woohoo! I'm tickled pink!! Since discovering my intolerance to lactose, enjoying a cup of pudding developed digestion problems.
This recipe creation has NO milk in it whatsoever! Once again I can enjoy pudding!! And because sugar is replaced with Stevia, there's less calories. Win-win!! So smooth, creamy and delicious!!!
Chocolate Coconut Pudding:
3 T. cornstarch
4 T. Stevia
1/2 T. dark cacao
1-1/2 c. coconut milk
1-1/2 T. coconut oil
1/2 t. vanilla
Whisk the dry ingredients in a medium-sized saucepan. Whisk in the coconut milk and bring to a boil over medium heat, whisking constantly. Lower heat and simmer, whisking until mixture thickens, about 4 minutes. Remove from heat and whisk in the coconut oil and vanilla. Cool slightly. Eat warm.
Note: This pudding is best prepared soon before eating as refrigeration causes lumps. Recipe is for two to three servings of pudding.
